According to MSM, herself, in an interview with Dennis Miller, she did her 
own stunt with the bees. The bee wrangler put queen bee pheromones on her 
shoulder and the bees swarmed without harming her.

I read in American Cinematographer that the main cinematographer for FGT is 
allergic to bees and he was stung. A nurse on the set was able to give him 
a shot that saved his life.

Look for Fried Green Tomatoes on NBC July 9th. Extra scenes were added for 
the TV viewing.
